The Story of Your Matcha

For premium matcha, the tea plants are grown in the shade before harvest, allowing the leaves to develop higher levels of chlorophyll and valuable amino acids. The leaves are carefully selected at the beginning of the spring harvest, when they are still fresh and supple, yet already carry a rich depth of flavor. The tea is then ground into a fine powder using traditional stone mills – slowly and gently, to preserve its vibrant green color, natural sweetness, and creamy texture. The result is a premium matcha that is smooth and well-balanced even when whisked with water alone, but also works perfectly as a matcha latte.

How to make the perfect matcha

Making matcha is a mindful, slowing-down ritual that connects you to the centuries-old traditions of the Japanese tea ceremony. Here’s how you can prepare your own perfect cup:

Water Temperature

Heat the water to 70–80 °C. Boiling water can easily make matcha bitter – patience is what brings perfection here.

Dosage

Use 1–2 grams (½ teaspoon) of matcha powder. If possible, sift it beforehand to remove any lumps and achieve a truly smooth, silky texture.

Mixing Technique

Add 60–80 ml of hot water. Whisk vigorously for 15–20 seconds using W- or M-shaped motions until a light foam forms on the surface. This is where the magic happens—the foam should be smooth and creamy.

Extra Tip

For a latte, first mix the matcha with a small amount of hot water to form a smooth paste, then add your preferred warmed milk. For an iced matcha, whisk it with cold water first, then pour it over ice.

💡 Quick Tip: Look for a vibrant green color, a finely milled texture, and a fresh aroma. Good matcha has a slightly sweet, fresh “grassy” scent—never musty or dull.

Matcha is delicate, so it requires proper care to preserve its vibrant color and fresh flavor:

  • Store it in an airtight container, protected from light, heat, and moisture.
  • Keep it in the refrigerator for maximum freshness (allow it to come to room temperature before opening).
  • Use within 2–4 months after opening for the best flavor.
  • Unopened and stored in the refrigerator, it can retain its freshness for up to 24 months.
  • Always use a dry spoon—moisture is matcha’s biggest enemy.
